Tasting Notes:

Aromatic style with tropical fruits, apple and some freshly cut grass. Wonderful palate weight driven by tropical fruits, apple and lime juice flavours. A fine line of crisp acidity creates a backbone and gives a refreshing and zippy finish.

Technical:

Post picking, the grapes were pressed then settled overnight before racking to clear juice. Fermented with wild yeast strain under cool conditions for two weeks. We left the juice on lees to build body and texture until it was fined and filtered for bottling. Drink upon release or over the short to medium term.
